Lentil Salad

Puy Lentil, Tomato, Corn and Coriander Salad, topped with Feta Cheese
I love mixing grains and creating delicious salads for lunch.
This one has a mexican influence to it, mixing toasted Puy lentils with halved plum tomatoes, tinned sweetcorn, fresh coriander, and sprinkled with feta and chilli flakes - mixed together to create a melody of flavours.

So healthy, nutritious - and takes minutes to create!
