Homemade healthy lunch


I love experimenting with different flavours and ingredients. Being a vegetarian (I recently started to eat fish too) I take it upon myself to dream up some mix of flavours that will not only be delicious but nutritious too!

I started off this dish by toasting some ready cooked puy lentils in a shallow pan. Once toasted and warm, add chopped plum tomatoes, diced red onion and walnuts and feta cheese. Serve with a soft poached egg for some added protein.

Yummy.
